Hi Nancy -

That's a tough one. For those areas you don't visit often or at all, I'd just leave the plants and let Mother Nature take its course. The plants will eventually rot and be gone. I'm on 2.5 acres (not nearly as much as you!) and that's what I've done for areas that I don't tend often. You could try to encourage faster "composting" by following some methods for speeding up the process such as putting manure on the plant and covering with dark plastic.

For any areas you will be in often and are concerned about coming in contact with those now dead plants, you'll have to get someone to pull up and remove the plants. There really isn't any other way. Hopefully, someone else has some ideas. Help!
